alitalia have two daily flights to israel from rome and milan

We do fly to Israel. Did you download the Skyteam Timetable (or try filing a PIREP)?

If you check the SkyTeam Timetable, there appear to be two daily flights to Tel Aviv from Rome Fiumicino, and one from Milan Malpensa (operated by Air One). Any of those flights would be valid flights for SimAirline.
